Recipes
The following are some recipes for the Fall/Winter season by Yael Steinfeld,
nurse practitioner and student of Ayurveda:
Cook 1 cup of brown rice with 1/2 cup of mung beans in 3 cups of water until soft. Add Himalayan salt to taste and mix.
In a skillet, warm 1 tablespoon of coconut oil or sesame oil. Add 1 chopped onion and sauté. Add 1.5 teaspoons of cumin seeds, 1/4 tsp of Turmeric powder, and 1/2 tsp of Fennugreek seeds (bitter, reduces Pitta). Add one bundle of fresh chard or other greens. Cook for a few minutes and add to the rice and mung beans.
This meal will balance Pitta and Vata – Yum!
Cook 1/2 cup rolled oats in 1/2 cup water and 1/2 cup organic milk until soft. Add dry fruits like raisins, figs, dates, etc. Add some grated ginger and just before serving, sprinkle 1/4 tsp of cinnamon.
